Kale juice has many health benefits! Full of antioxidants, Kale provides you with both glucosinolates and isothiocyanates: two cancer preventing components. In addition, the plant is an excellent source of Vitamin K. Vitamin K is one of the body’s main inflammation regulation nutrients and plays an important role in retaining calcium (Vitamin K aids in bone development). Furthermore, Kale is chock-full of beneficial vitamins, minerals, and nutrients.

Further Understanding Kale

Kale is a leafy vegetable that comes in green, purple, and other color varieties. There are three different types of Kale:

• Dinosaur Kale has blue-green leaves and tastes sweet.

• Ornamental Kale is smooth and rich in flavor. This is the Kale used in salads!

• Curly kale is deep green and has a strong flavor.

Kale is part of the Brassica family and closely relatives cabbage.  The vegetable was cultivated over 2,000 years ago, only recently becoming popular due to it’s health properties.
